Water that is injected later in the process often lacks cleanliness and may contain harmful substances, leading to an unpleasant taste and increasing the risk of various health issues. So, how can consumers identify whether the lamb they are purchasing has been water-injected? Here's a detailed guide. At first glance, you can look for specific signs. A qualified piece of mutton should have a purple quarantine inspection seal from the animal husbandry department along with a valid quarantine certificate. If the meat doesn’t have this seal or certificate, it might be unqualified. Additionally, fresh lamb should have a tender, bright red color with a glossy surface. When cut, it shouldn’t release much liquid. However, water-injected lamb tends to appear pale red, especially in the meat, while the fat looks dull and lifeless. When cut, it will often spill out a large amount of pale red fluid. Next, use your touch. When you gently press the cut surface of normal meat, there should be very little grease oozing out. The cut area should feel slightly sticky when touched with your finger, and it should have a smooth, clean texture without any foul smell. On the other hand, water-injected meat feels slippery and doesn't stick to your finger. It may also feel wet or overly soft to the touch. Lastly, try the burning test. Take a small piece of paper towel and place it on the cut surface of the lamb. Let it sit for 5 to 15 seconds. If the paper gets soaked and then burns completely when lit, it’s likely normal meat. However, if the paper doesn’t burn well or remains damp, it may indicate that the meat has been injected with water. These simple tests can help you make a more informed decision when buying lamb, ensuring you get high-quality and safe meat for consumption. Always stay alert and check the quality before making a purchase.
